CHICKEN LETTUCE WRAPS
INGREDIENTS:
~ 2 c white rice ~
~ 3 yellow bell peppers, sliced ~
~ 4 handfuls bean sprouts ~
~ 5 shallots, chopped ~
~ 2 small/ 1 medium onion, sliced ~
~ 3 chicken breasts, fat removed and sliced ~
~ salt ~
~ground black pepper ~
~ garlic powder ~
~ SRIRACHA Chili Sauce ~
DIRECTIONS:
1. In a rice cooker, cook the rice with salt to taste. When it's cooked, set aside in a bowl.
2. Slice the onions and set aside in a bowl.
3. Heat a little vegetable oil in a skillet at medium heat. Add the bell peppers and cook covered 8 minutes, stirring occasionally.
4. Add in the bean sprouts. Cook covered 8 minutes stirring occasionally. After 5 minutes add salt and pepper to taste.
5. Add the shallots and SRIRACHA . Cook 9 minutes covered stirring occasionally. When done set aside in a bowl.
6. Heat vegetable oil at medium heat in a skillet and cook the chicken covered 11 minutes. After 8 minutes add salt, pepper and garlic powder to taste.
7. Increase to med-high heat. Drain if necessary. Cook uncovered for 10 minutes, stirring until browned. Set aside in a bowl.
8. Pull apart the lettuce heads and put the leaves in a bowl.
Serve buffet style and ENJOY!!!
