Hope's Homemade Chili

HOPE'S HOMEMADE CHILI


INGREDIENTS:
~ 3 medium tomatoes ~
~ 1 large green bell pepper, chopped ~
~ 1 medium carrot, grated ~
~ 1 medium onion, chopped ~
~ 2 garlic cloves, minced ~
~ 1 lb ground chunk ~
~ 1 15.25 oz can black beans ~
~ 1 tbsp lemon juice ~
1/4 tsp SRIRACHA Chili Sauce ~
~ 1 tbsp salt ~
~ 1 tbsp ground black pepper ~
~ 1/4 tsp chili powder ~
~ vegetable oil ~


DIRECTIONS:
1. Slightly cut an X on the top of the tomatoes. At medium-high heat, boil  the tomatoes for 14 minutes. Peel them and dice. Set aside.

2. Heat a little vegetable oil in a saucepan at medium heat. Add the bell peppers and cook covered 6 minutes, stirring occasionally.  

3. Stir in the carrots and cook 8 minutes, stirring occasionally. 

4. Add the onion and cook 4 minutes.

5. Mix in the garlic, lemon juice and chili sauce. Cook 9 minutes stirring occasionally. 

6. Add the tomatoes and cook covered 13 minutes, stirring occasionally. Set aside.

7. Heat a little vegetable oil in a skillet and cook the ground chunk approximately 5 minutes, until browned.

8. Pour in the black beans and cook covered 8 minutes, stirring occasionally. 

9. After 5 minutes, add the salt, pepper, and chili powder.

10. Pour in the contents from the saucepan, and mix well. Reduce heat to medium-low and cook covered 14 minutes, stirring occasionally.
