RUSSIAN CHICKEN AND MUSHROOM SOUP
INGREDIENTS:
~ 5 tbsp butter, divided into 2 tbsp and 3 tbsp ~
~ 4 shallot onions, chopped ~
~ 1/2 large carrot, grated ~
~ 1/2 c cooked chicken, chopped ~
~ 1 tsp salt ~
~ 1/8 tsp ground black pepper ~
~ 1 tsp dried oregano ~
~ 1/2 tsp dried sweet basil ~
~ 6 c water ~
~ 2 potatoes, diced ~
~ 1- 8 oz pkg cut mushrooms ~
~ 1 tbsp lemon juice ~
DIRECTIONS:
1. In a saucepan, heat 3 tbsp butter at medium heat.
2. Add the chopped shallots and grated carrots and cook, stirring occasionally to prevent burning, for 3 minutes.
3. Add the chicken and cook, stirring occasionally to prevent burning, for 2 minutes.
4. Add the salt, pepper, oregano, basil, water, and potatoes, and cook covered until the potatoes are tender, approximately 20 minutes. When it starts to boil, lift the lid a little. Taste the soup for salt, if not enough to your taste, feel free to add more.
5. While this is cooking, heat the rest of the butter (2 tbsp) in a skillet at medium heat.
6. Add the mushrooms and cook, stirring occasionally to prevent burning, for 3 minutes. Then add the lemon juice, stirring it all in well, and continue cooking another 5 minutes, stirring occasionally to prevent burning.
7. When there are 4 minutes left for the soup to cook, add the mushrooms to the pot, stir them in and cook for the remaining time.
