Tilapia-Rice Casserole

TILAPIA-RICE CASSEROLE


INGREDIENTS:
~ 4.5 c water ~
~ 2.5 tbsp butter ~
~ 1.5 c white long grain rice ~
~ 3/4 tsp Italian seasoning ~ 
~ 3/4 tsp garlic powder ~
~ 1 tsp salt ~
~ 1/2 tsp ground black pepper ~
~ 1/2 red bell pepper, sliced ~
~ 1/2 c canned red beans ~
~ 1/2 c canned black olives, sliced ~
~ 4 tbsp Parmesan cheese, grated ~
~ 1 medium-small onion, sliced ~
~  4-6 tilapia fillets ~
~ VEGETA seasoning ~
~ 1 c cheddar cheese, shredded ~ 
~ 5 shallot onions, chopped ~ 


DIRECTIONS:
1. Combine the water, butter, rice, seasoning and powder in a saucepan and bring to a boil. Pre-heat the oven to 375 F. Grease a 9x13 baking pan and pour the rice contents into it. Cover with foil and bake for 10 minutes.

2. Add salt and pepper, mix well. Top with the bell pepper, beans, olives, cheese, onion and fillets. Sprinkle with the VEGETA to taste. Cover with foil and bake for 20 minutes.

3. Spread the cheddar cheese over the fillets, top with the shallot onions and bake uncovered for 8 minutes.
